This Sheet Pan Salmon & Veggies meal is an easy, no-mess dinner that comes together fast and supports overall health. Ingredients: (Serves 2–3)
1 salmon filet
Asparagus
Zucchini
Olive oil
Salt & pepper
Steps:
Preheat the oven to 400°F.
Line a sheet pan with parchment paper or lightly grease it.
Place salmon, asparagus, and zucchini on the pan.
Drizzle with olive oil and season with salt and pepper.
Roast for 15 minutes, or until salmon is cooked through and veggies are tender.
On carb days, add roasted potatoes to the pan or serve on the side.
