Ingredients: (Makes 12 Muffins)

  • 10–12 eggs (or 8 eggs + 1 cup egg whites for lower calories)

  • 1 cup diced bell peppers

  • 1 cup chopped spinach

  • ¾ cup lean ground turkey or diced turkey breast

Steps:

  1. Preheat oven to 350°F.

  2. Lightly grease a muffin tin (or use silicone liners).

  3. In a large bowl, whisk eggs thoroughly.

  4. Stir in peppers, spinach, turkey, and any optional add-ins.

  5. Pour mixture evenly into the muffin cups, filling about ¾ full.

  6. Bake for 18–22 minutes, or until the centers are set.

  7. Let cool before removing.
