A Simple, Grab-and-Go Breakfast for Busy Adults and Active Families. These Egg Muffins take just a few minutes to prep, are high in protein, and support metabolism. Plus, they’re kid-friendly, and easy to customize with whatever veggies you have on hand.
Ingredients: (Makes 12 Muffins)
10–12 eggs (or 8 eggs + 1 cup egg whites for lower calories)
1 cup diced bell peppers
1 cup chopped spinach
¾ cup lean ground turkey or diced turkey breast
Steps:
Preheat oven to 350°F.
Lightly grease a muffin tin (or use silicone liners).
In a large bowl, whisk eggs thoroughly.
Stir in peppers, spinach, turkey, and any optional add-ins.
Pour mixture evenly into the muffin cups, filling about ¾ full.
Bake for 18–22 minutes, or until the centers are set.
Let cool before removing.
