When the weather starts to shift and the evenings are still a little cool, a simple bowl of soup can be exactly what the family needs.
This Chicken & Vegetable Soup is warm, nourishing, and incredibly easy to make on a busy weeknight. Using rotisserie chicken keeps preparation simple while the combination of vegetables, broth, and pasta or rice makes it satisfying without feeling heavy.
Ingredients
2 cups shredded rotisserie chicken
6 cups chicken broth
2 carrots, sliced
2 celery stalks, chopped
½ onion, diced
2 cloves garlic, minced
1 cup small pasta or cooked rice
1 tbsp olive oil
Salt and pepper
Instructions
Heat olive oil in a large pot and sauté onion, garlic, carrots, and celery for 3–4 minutes.
Add chicken broth and bring to a simmer.
Stir in chicken and pasta (or rice).
Simmer for about 10 minutes until pasta and vegetables are tender.
Season with salt and pepper and serve warm.
