Ingredients
4 medium sweet potatoes
1 pound lean ground turkey
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
½ cup black beans, rinsed and drained
½ cup corn, fresh or frozen
½ cup diced tomatoes
½ avocado, diced
½ cup plain Greek yogurt
¼ cup shredded cheddar cheese
Fresh cilantro or sliced green onions for garnish (optional)
Lime wedges for serving (optional)
Directions
Preheat the oven to 400°F.
Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Bake for 45–55 minutes, or until tender when pierced with a knife.
While the potatoes cook, heat the olive oil in a large skillet over medium heat.
Add the onion and cook for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
Add the ground turkey and cook until browned and no longer pink, breaking it into small pieces as it cooks.
Stir in the chili powder, cumin, paprika, oregano, salt, and black pepper.
Add the black beans and corn. Cook for 2–3 minutes, stirring occasionally, until heated through.
Remove the sweet potatoes from the oven and carefully slice each one lengthwise. Gently fluff the inside with a fork.
Fill each potato with the turkey mixture and top with tomatoes, avocado, Greek yogurt, and cheddar cheese.
Finish with cilantro, green onions, or a squeeze of fresh lime if desired. Serve warm.
