Ingredients

  • 1 pound lean ground beef (90% lean or higher)

  • 1 tablespoon olive oil

  • 3 cups broccoli florets, cut into bite-sized pieces

  • 2 cloves garlic, minced

  • 1 teaspoon fresh grated ginger (or ½ teaspoon ground ginger)

  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon honey

  • 1 tablespoon rice vinegar

  • 1 teaspoon cornstarch

  • 2 tablespoons water

  • 3 cups cooked brown rice

  • 2 green onions, sliced (optional)

  • Sesame seeds for garnish (optional)

Directions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add the ground beef and cook until browned, breaking it into small pieces. Drain excess fat if needed.

  3. Stir in the garlic and ginger, cooking for about 30 seconds until fragrant.

  4. Add the broccoli and cook for 4–5 minutes until bright green and just tender.

  5. In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, and water.

  6. Pour the sauce into the skillet and stir until it thickens and evenly coats the beef and broccoli.

  7. Spoon the cooked brown rice into bowls and top with the beef mixture.

  8. Garnish with green onions and sesame seeds if desired.
