Homemade cocoa banana cupcakes.

Inspired by the rich cocoa-growing heritage of Ghana and the natural sweetness of ripe bananas, these cupcakes bring together simple ingredients to create a soft, chocolatey treat. They’re an easy homemade dessert that feels comforting, naturally sweet, and perfect for family baking.

Ingredients

  • 3 ripe bananas (mashed)

  • 2 eggs

  • 1/4 cup sugar or honey

  • 1/4 cup oil or melted butter

  • 2 cups flour

  • 1/3 cup cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda

Steps

  1. Preheat oven to 350°F (175°C) and line a cupcake tray.

  2. Mash bananas in a bowl. Add eggs, sugar, and oil. Mix well.

  3. Add flour, cocoa powder, baking powder, and baking soda. Stir until just combined.

  4. Pour into cupcake liners, about 2/3 full.

  5. Bake for 18–22 minutes.

  6. Let cool before serving.
